Gross but great!

I love event-specific food - mince pies for Christmas, hot cross buns for Easter, cake for birthdays and champagne (yes, it is a food type) on New Year’s Eve. So of course Halloween presents all sorts of fun ideas for a spooky feast – and most of them are really easy, just a variation on a standard recipe. I think I’ll be making some Eyeball Cupcakes for the neighbourhood trick-or-treaters on 31 Halloween. More to come this month …
How to: Simply make a batch of standard vanilla cupcakes and decorate as follows:
*Make a batch of vanilla icing and ice the cupcakes, reserving a bit of the icing.
*Pile the frosting up a bit in the middle to make a domed shape, like an eyeball/
*Tip: To make the surface smooth, dip a butter knife in hot water and smooth it over the top of the icing.
*Tint the remaining icing bright red with red food colouring and use a pastry bag to pipe the red icing on the tops of the cupcakes in vein patterns – make the veins radiate from the centre of the cupcake for a realistic bloodshot look.
*Cut black jelly beans in half and place in the middle of a green round gum sweet (wine gums could work). Place the ‘iris and pupil’ in the centre of each cupcake. Gross!
